The final page of Bleach chapter 509 confirms my speculation. The Juha Bach currently residing in Soul Society wasn't in fact the real villain Buckbeard.

This entire chapter confirmed it. Remember, when we were first introduced to Buckbeard he was a ruthless leader, he killed his subordinates with ease and no regret. Once he learned that Zanka No Tachi South replaced the souls of the dead with former subordinates he refused to attack.

That may be true, but he did have remorse as he stared in to the face's of the victims (in this case subordinates).

The thing is, how is the real Juhabach and the quincies still alive, quincies are humans aren't they, yet he has been alive for a thousand years, did they become something other than humans, correct me if I'm wrong but didn't old man Yama say JuhaBach still had a human heart, did he mean that figuratively, or are the quincies not human anymore?

I remember reading that Quincie's had their own system of Kido. If this is the reason for their existence is unknown, but they seem to have many techniques, I wouldn't be surprised if in fact they had a unique ability which provided them with some sort of nourishment. Know that the Quincy are very good at Reishi absorption. For the human heart response by Yama I am not sure, but like I said it could all be related to their chain of abilities.
