just because of the sharingun, you cannot just copy every jutsu...
you need to have the chakra which fits for that element

he rarely uses katon but im pretty surre that kakashi used katon in a fight with itachi(the fight with itachi after narlrutozz homecoming)

ot: kakashi skills with obito eyes are kida crazy he has shown better copying skills then any uchiha thats why he has the 3 elements.

BTW : manga states you can learn any element but you have to start from scratch thats why people like 3rd hokage can master "all leaf nin" because they have mastered each element

Did you guys ever notice he always standing on water when he uses water style? Because the help with his Sharingan (which he copies the chakra flow of the Jutsu he copies from) he manipulates the water with his chakra and creates water style jutsu same with the clones as long as he has water to manipulate he is able to use water or if he's near it. And for earth he doesn't create only manipulate! By using his chakra he is able to create mud walls(which is why he puts both of his palms on the ground when facing pain) and what not. Even going underground. Geez get it now? Theres a fine line between manipulation and creating it
