Don't think oro is jinchuuriki. It's called 8 tailed, not 8 headed :D And maybe orochi means snake, that's why his name is Orochimaru. And i think that hydras are mostly represented with 8 heads.

Yamato-Orochi was the 8-tailed snake that was gutted and the sword Kusanagi-no-Tsurugi was found inside. Orochimaru pulls the sword Kusanagi-no-Tsurugi from his stomach..
